Pumpkin Spice and Chocolate Chip Waffles
2 1/2 cup flour (or flour substitute)
4 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground ginger
1/2 tsp salt
1/4 cup brown sugar
1 cup canned or fresh cooked pumpkin (can substitute sweet potato)
2 cups milk (or milk substitute like almond milk or rice milk)
4 eggs separated
1/4 cup melted butter (applesauce as an alternative to cut out fat and dairy
* 1 cup dark chocolate chips (or semi-sweet if you prefer) OPTIONAL BUT YUMMY
- Combine flour, baking powder, cinnamon, allspice, ginger, salt, brown sugar in a mixing bowl. In separate bowl stir pumpkin, milk, and egg yolks.
- Whip egg whites with hand mixer or kitchen-aid style mixer until soft peaks form.
- Stir flour mixture and 1/4 cup melted butter into the pumpkin mixture until combined.
- Fold in egg whites.
- Cook and eat up!
We served them with butter and organic maple syrup. Kids and parents were in pumpkin heaven. Enjoy!
