Pumpkin Spice and Chocolate Chip Waffles

IMG_5858This was a nice lazy Sunday morning with LDS General Conference on the agenda. So of course I needed to whip up a yummy batch of waffles. Give this recipe a try:

2 1/2 cup flour (or flour substitute)

4 teaspoons baking powder

2 teaspoons ground cinnamon

1 teaspoon ground allspice

1 teaspoon ground ginger

1/2 tsp salt

1/4 cup brown sugar

1 cup canned or fresh cooked pumpkin (can substitute sweet potato)

2 cups milk (or milk substitute like almond milk or rice milk)

4 eggs separated

1/4 cup melted butter (applesauce as an alternative to cut out fat and dairy

* 1 cup dark chocolate chips (or semi-sweet if you prefer) OPTIONAL BUT YUMMY

  1. Combine flour, baking powder, cinnamon, allspice, ginger, salt, brown sugar in a mixing bowl. In separate bowl stir pumpkin, milk, and egg yolks.IMG_5853
  2. Whip egg whites with hand mixer or kitchen-aid style mixer until soft peaks form.
  3. Stir flour mixture and 1/4 cup melted butter into the pumpkin mixture until combined.
  4. Fold in egg whites.IMG_5854
  5. Cook and eat up!

We served them with butter and organic maple syrup. Kids and parents were in pumpkin heaven. Enjoy!
